    Dr Saleha Akter is a Post-doctoral Research fellow in the Centre for Nutrition and Food Sciences at Queensland Alliance for Agriculture and Food Innovation. Her research passion for Native Australian foods lies in understanding the nutritional, bioactive and antinutritional properties and assessing their safety. She has expertise on using in-vitro simulated gastrointestinal digestion models and cell culture techniques using in vitro mammalian cell models to evaluate the in vitro absorption and bioactivities of phytochemicals. She is passionate about understanding the biotransformation of phytochemicals and nutrients inside the body. Her latest research works involve in vitro digestion, microbial degradation, bioaccessibility, in vitro absorption using cell culture techniques and bioavailability of bioactive and nutrient dense functional food ingredients and phytochemicals from Native Australian foods. Her future research endeavours are exploring the enzymatic and microbial degradation mechanisms of the bioactive phytochemicals and their metabolites and identification and characterization of the gut microbiota in health promotion and disease prevention.
